Gluten-Free Banana Bread with Walnuts and Oats

Ingredients

  • 3 ripe bananas (mashed)
  • 1/3 cup almond milk
  • 1/4 cup coconut oil
  • 2 tsp lemon juice
  • 2 cup oat flour
  • 1/2 cup rolled oats
  • 1/3 cup almond flour
  • 2 tsp baking powder
  • 1/2 coconut sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 banana (to decorate on top)
  • 1/3 cup walnuts (chopped)

Chia flax egg

  • 2 TBS flaxseed meal
  • 1/3 cup water

Preparation

  1. Preheat oven 180ºC. Line baking loaf with parchment paper. Set aside

  2. Peel 3 bananas and mash them. Okay to have a few big bits. Place mashed bananas into large mixing bowl along with milk, coconut oil, lemon juice

  3. Beat with mixer for around 40 seconds until there are no lumps. Set aside

  4. In another bowl, combine flour, oats, almond flour, baking powder, coconut sugar and cinnamon

  5. Pour the banana mixture onto the flours, chia egg and add vanilla extract

  6. Use beaters again to mix ingredients together. Low speed to form nice batter.

  7. Add in chopped walnuts and combine into the batter

  8. Pour batter into loaf, decorate with one banana cut lengthwise, press it into the batter slightly

  9. Bake approx 40 minutes until golden brown or until skewer comes out clean!

  10. Cool bread on rack at least 2 hrs before slicing. Store in refrigerator or freeze remaining slices
