Vegan Mini Banana Bread
Ingredients
- 1 tablespoon flaxseed meal
- 2.5 tablespoons water
- 1 mashed banana
- 1/2 tablespoon cinnamon
- 2 tablespoons coconut flour
- 1 tablespoon nut butter
- 2 tablespoons almond milk
- 1/4 teaspoon baking powder
- 1/4 teaspoon vanilla
- 1/2 teaspoon coconut sugar
Preparation
Preheat oven to 350°F.
In a small bowl, mix the flaxseed meal and water to make a flax egg and let it sit for 5 minutes.
In a larger bowl, mix the mashed banana, cinnamon, coconut flour, nut butter, almond milk, baking powder, vanilla, and coconut sugar.
Once the flax egg has thickened, add it to the banana mixture and stir everything together.
Grease a small baking dish, pour in the batter, add desired toppings, and bake for 35-37 minutes.
