Leftover Cinnamon Banana Bread
Ingredients
- 2 eggs
- 2 bananas
- 1/4 cup unsweetened almond milk
- 1/4 cup coconut flour
- 1 tbsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp vanilla
- 2 tbsp nut butter
Preparation
Cinnamon sugar mixture: 1/4 cup coconut sugar + 1/2 tsp cinnamon
In a bowl, whisk the eggs then add in the rest of the bread ingredients and mix well
Grease 2 mini loaves then add 1/2 the batter to them. Then put 3/4 of the cinnamon sugar mixture on top. Top with the rest of the batter. Sprinkle the remaining cinnamon sugar mixture on top. Bake for 40-45 minutes
