Leftover Cinnamon Banana Bread

Ingredients

  • 2 eggs
  • 2 bananas
  • 1/4 cup unsweetened almond milk
  • 1/4 cup coconut flour
  • 1 tbsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla
  • 2 tbsp nut butter

Preparation

  1. Cinnamon sugar mixture: 1/4 cup coconut sugar + 1/2 tsp cinnamon

  2. In a bowl, whisk the eggs then add in the rest of the bread ingredients and mix well

  3. Grease 2 mini loaves then add 1/2 the batter to them. Then put 3/4 of the cinnamon sugar mixture on top. Top with the rest of the batter. Sprinkle the remaining cinnamon sugar mixture on top. Bake for 40-45 minutes
