Banana Chocolate Oat Muffins

Ingredients

  • 2 tbsp ground flax + 6 tbsp water (flax egg)
  • 3 bananas, mashed
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1 + 1/4 cups rolled oats
  • 1 + 3/4 cups oat flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 3/4 cup vegan chocolate chips

Preparation

  1. Whisk the flax and water in a small bowl and set aside to thicken.

  2. In a large bowl mix all the wet ingredients.

  3. Add in the dry ingredients and mix till just combined.

  4. Fold in the chocolate chips and divide batter into a prepared muffin tray (recipe makes about 16 muffins).

  5. Bake at 325F for 25-30 minutes. They will be quite soft when they first come out so let them cool completely on a cooling rack.

  6. Store in a container in the fridge.

Tips

  1. Make a double batch of the recipe and freeze half of the muffins for busy weeks.
