Banana Chocolate Oat Muffins
Ingredients
- 2 tbsp ground flax + 6 tbsp water (flax egg)
- 3 bananas, mashed
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup almond milk
- 1 tsp vanilla extract
- 1 + 1/4 cups rolled oats
- 1 + 3/4 cups oat flour
- 1.5 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 3/4 cup vegan chocolate chips
Preparation
Whisk the flax and water in a small bowl and set aside to thicken.
In a large bowl mix all the wet ingredients.
Add in the dry ingredients and mix till just combined.
Fold in the chocolate chips and divide batter into a prepared muffin tray (recipe makes about 16 muffins).
Bake at 325F for 25-30 minutes. They will be quite soft when they first come out so let them cool completely on a cooling rack.
Store in a container in the fridge.
Tips
Make a double batch of the recipe and freeze half of the muffins for busy weeks.
