Vegan Low-Carb Sugar Cookies

Ingredients

Dry

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup monk fruit sweetener
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

Wet

  • 2 flax eggs (2 tablespoons ground flaxmeal and 6 tablespoons water)
  • 1/4 cup melted coconut oil
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • Rainbow sprinkles

Preparation

  1. Prep your flax egg and preheat the oven to 350°F first.

  2. Mix the dry ingredients in a large bowl first, then add the wet ingredients minus sprinkles into that bowl to make the batter.

  3. Roll into 14-16 balls and place on a baking tray lined with parchment paper.

  4. Flatten with your thumb or a spoon, then press sprinkles into the top of the dough disks. Because there is no egg, the cookies will not grow or expand, so flatten as much as you want.

  5. Bake for 10 minutes at 350°F.
