Cranberry White Chocolate Cookies
Ingredients
- 2 cups oat flour
- 2 eggs, room temperature
- 6 tbsp coconut oil (or butter), melted
- 3/4 cup coconut sugar
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup @oceansprayinc Craisins® dried cranberries
- 3/4 cup white chocolate chips
Preparation
Preheat oven to 350 degrees. Line a baking sheet with foil and spray oil evenly across the foil.
In an electric mixer, combine eggs, sugar, coconut oil and vanilla extract. If you don’t have one, whisk together the eggs and sugar first, then add the coconut oil and whisk until no clumps remain.
In a separate bowl, combine flour, baking soda, salt, and cinnamon.
Slowly add the dry ingredients to wet. Once combined, fold in Craisins® and white chocolate chips.
Let dough sit in the fridge for 15-20 minutes.
Using an ice cream scoop, place 15 cookie dough balls on a baking sheet. Bake for 14-16 minutes, or until edges start to brown.
Let cool and enjoy.
