Pillowy Soft Cranberry White Chocolate Cookies
Ingredients
- 2 cups oat flour
- 2 eggs, room temperature
- 6 tbsp coconut oil (or butter), melted
- 3/4 cup coconut sugar
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup dried cranberries
- 3/4 cup white chocolate chips
Preparation
Preheat oven to 350 degrees and line a baking sheet with parchment paper
Whisk together eggs, sugar, coconut oil and vanilla extract.
In a separate bowl, combine flour, baking soda, salt, and cinnamon
Slowly add the dry ingredients to wet. Once combined, fold in cranberries and white chocolate chips
Let dough sit in the fridge for 15-20 minutes
Using an ice cream scoop, place 15 cookie dough balls on the baking sheet. Bake for 14-16 minutes, or until edges start to brown
Let cool and enjoy
