Chocolate Almond Butter Oatmeal Bars

Ingredients

  • 1 cup pitted medjool dates
  • 1/2 cup coconut oil
  • 1/2 cup almond butter or peanut butter
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 cup rolled oats
  • 1/4 cup oat flour
  • 1/2 cup dark chocolate chips

Preparation

  1. Preheat the oven to 350ºF.

  2. In a food processor combine dates, almond butter, and coconut oil.

  3. Process to form a sticky paste.

  4. Add the oats, oat flour, baking soda, salt, and cinnamon.

  5. Process to combine.

  6. Press into a greased or lined baking pan (8×5 inches).

  7. Bake for 20-22 minutes at 350ºF.

  8. Cool, then top with melted chocolate and chill for at least 1-2 hours.

  9. Sprinkle with flaky salt, slice, and enjoy!
