Magical Matcha Waffles
Ingredients
- 2 large eggs
- 1/4 cup honey
- 1 tsp vanilla extract
- 2 tbsp coconut oil (partially melted)
- 1 cup almond milk
Preparation
Preheat your waffle maker to a low/medium setting
Beat 2 large eggs in a mixing bowl. Then pour the rest of the wet ingredients (except the coconut oil). Stir well
Dry inredients: 2 cups gluten-free flour blend, 2 tsp baking powder, 1/2 tsp baking soda, 1 1/2 tsp matcha powder
Start adding your dry ingredients while you whisk the mixture. Add the coconut oil and continue mixing until you get a silky smooth texture
Pour 1/2 cup of batter into the waffle maker
Cook your waffles for 2-3 minutes
Repeat the steps for the remaining mixture
You can serve these waffles with coconut whipped cream, honey, or fresh fruit
