Raspberry Coconut Balls

Ingredients

  • 200g grated coconut
  • 2 tsp. vanilla extract
  • 80g coconut oil
  • 3 tbsp. honey
  • 20-40g freeze-dried raspberries

Preparation

  1. Add the freeze-dried raspberries into a food processor and pulse a few times until the raspberries are crushed into almost powder texture. Add it into a bowl and set aside

  2. Add the grated coconut, honey, coconut oil, and vanilla extract into one bowl. Mix everything with your hands until well combined

  3. Using your hands squeeze the mixture into a small ball. Don't roll the ball. Just squeeze it in your hands into a ball shape. Cover the coconut ball with the freeze-dried raspberries using a spoon until the ball is completely covered with the raspberries. Continue with the rest of the mixture. You should have around 20 balls

  4. Place the balls on a baking sheet or a plate and put them into a fridge. Let them cool in a fridge for about 2 hours
