Fancy Charlotte Cake with Strawberries

Ingredients

  • 3 eggs or three flax eggs
  • 3/4 cup of almond milk
  • 1/2 cup of unrefined sugar
  • 1 1/2 cups of almond flour
  • 1/2 cup of coconut flour
  • 1/2 cup of coconut oil, room temperature
  • 1 tsp of baking powder
  • 1 tsp of baking soda
  • 1 tsp of vanilla extract

Preparation

  1. First, preheat your oven to 350 F. Grease the pan with oil.

  2. Take a large bowl and mix coconut oil with sugar. Then add the eggs, vanilla extract and almond milk. Whisk the ingredients until you get a well-incorporated batter.

  3. Now add the rest of the ingredients and mix them well. Keep on stirring until the batter reaches a thick creamy consistency.

  4. Pour the batter into your baking pan, making sure that it is spread evenly.

  5. Pop the cake in the oven and bake it for 45-55 minutes. Do the toothpick test to ensure that it’s baked well before taking it out.

  6. Once out, set the cake aside to cool.
