Fancy Charlotte Cake with Strawberries
Ingredients
- 3 eggs or three flax eggs
- 3/4 cup of almond milk
- 1/2 cup of unrefined sugar
- 1 1/2 cups of almond flour
- 1/2 cup of coconut flour
- 1/2 cup of coconut oil, room temperature
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp of vanilla extract
Preparation
First, preheat your oven to 350 F. Grease the pan with oil.
Take a large bowl and mix coconut oil with sugar. Then add the eggs, vanilla extract and almond milk. Whisk the ingredients until you get a well-incorporated batter.
Now add the rest of the ingredients and mix them well. Keep on stirring until the batter reaches a thick creamy consistency.
Pour the batter into your baking pan, making sure that it is spread evenly.
Pop the cake in the oven and bake it for 45-55 minutes. Do the toothpick test to ensure that it’s baked well before taking it out.
Once out, set the cake aside to cool.
