Special Citrusy Madeleines with Maple and Vanilla

Ingredients

  • 60 g coconut oil (melted)
  • 60 ml orange juice
  • 150 ml unsweetened almond milk
  • 2 tbsp orange zest
  • 1 tsp vanilla extract
  • 8 tbsp maple syrup
  • 150 g ground almonds
  • 150 g GF flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda

Preparation

  1. Preheat oven to 180 ºC.

  2. Combine your wet ingredients in a mixing bowl.

  3. Add heaps of ground almonds into the batter.

  4. Chuck in the dry ingredients after sifting them.

  5. Stir well and add a few drops of milk if the batter looks dry.

  6. Pour the mixture into a madeleine pan.

  7. Bake for 15 mins or till the toothpick comes out clean.

  8. Enjoy your dainty sea-shell treats as you watch the last sunset of the decade.
