Sunday Gluten Free Oatmeal Banana Bread

Ingredients

  • 1/2 cup coconut oil
  • 1 cup coconut sugar
  • 2 cage free eggs
  • 3 bananas, mashed
  • 1 tsp vanilla extract
  • 1/4 cup greek yogurt
  • 1 1/4 cup gluten free flour
  • 1 cup gluten free old fashioned rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda

Preparation

  1. Preheat oven 350F - line loaf pan with parchment paper

  2. Mix together your wet ingredients then fold in the dry

  3. Scoop into loaf pan and sprinkle a handful of rolled oats across the top

  4. Bake for 50 minutes

  5. Enjoy
