Gluten Free Low Sugar Banana Loaf

Ingredients

  • 3 mashed bananas
  • 2 tbsp Greek yogurt
  • 2 egg whites
  • 2 tbsp honey
  • 1 cup gf oat flour
  • 1/2 cup gluten free plain white flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • Pinch of Himalayan salt

Preparation

  1. Mix all ingredients in a large bowl.

  2. Pour into a greased loaf tin.

  3. Bake at 180 degrees for 30 minutes or until a skewer comes out clean.

  4. Top with powdered peanut butter icing and let it set.

  5. Store in the fridge for longer shelf life and note that it is toddler friendly.
