Gluten-Free Banana Chocolate Chip Loaf

Ingredients

  • 3 large mashed bananas
  • 3 eggs
  • 1/2 cup smooth almond butter
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 65g coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate soda
  • Pinch of pink Himalayan salt
  • 1 tsp cinnamon
  • Loads of cacao nibs or dark choc chips

Preparation

  1. Preheat oven to 180 degrees F

  2. Grease a loaf tin with coconut oil

  3. Stir together the mashed banana, eggs, almond butter, coconut oil and vanilla

  4. Add in all the dry ingredients, stir until combined then fold in the cacao nibs

  5. Pour mixture into the loaf tin

  6. Bake for 45 mins until golden

  7. Leave in tin for 30 mins then turn out onto a cooling rack
