Healthy Gluten-Free Pumpkin Banana Loaf
Ingredients
- 2 mashed bananas
- 1 egg
- 2 spoons pumpkin purée
- 1 cup gluten free oats
- 1 cup coconut flour
- 1 tsp baking powder
- Loads of cinnamon
- 1 spoon milled flax
- 1/4 cup melted coconut oil
- Dark choc pieces
Preparation
Throw all ingredients into a large bowl and stir, ideally with help from a toddler.
Bake in a greased loaf tin at 180 degrees for 45 minutes.
Store the loaf in the fridge for up to a week and warm it before eating.
It is great for snacks and can be enhanced with a spread of nut butter or jam.
