Healthy Gluten-Free Pumpkin Banana Loaf

Ingredients

  • 2 mashed bananas
  • 1 egg
  • 2 spoons pumpkin purée
  • 1 cup gluten free oats
  • 1 cup coconut flour
  • 1 tsp baking powder
  • Loads of cinnamon
  • 1 spoon milled flax
  • 1/4 cup melted coconut oil
  • Dark choc pieces

Preparation

  1. Throw all ingredients into a large bowl and stir, ideally with help from a toddler.

  2. Bake in a greased loaf tin at 180 degrees for 45 minutes.

  3. Store the loaf in the fridge for up to a week and warm it before eating.

  4. It is great for snacks and can be enhanced with a spread of nut butter or jam.
