Gluten-Free Tropical Breakfast Loaf

Ingredients

Dry

  • 1/2 Cup Coconut Flour
  • 80g Vanilla Protein
  • 1/3 Cup Granular Sweetener
  • 2 tbsp Unicorn Superfoods Immunity Blend
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder

Wet

  • 1/2 Cup Egg Whites OR Alternative
  • 200g Banana, Mashed
  • 1/2 Cup Vanilla Yogurt
  • 1 tsp Vanilla Extract
  • 1/2 Cup Crushed Pineapple, drained of liquid
  • 1 PASSIONFRUIT

Preparation

  1. Preheat oven to 180°C

  2. Line a loaf tin with baking paper

  3. Combine all wet ingredients in one bowl

  4. In a separate bowl, combine all dry ingredients then add to the wet ingredients

  5. Mix well, pour into the loaf tin

  6. Bake for 45-50 minutes until a toothpick comes out clean when tested

  7. It will firm up while cooling

  8. Once completely cooked, wrap in cling wrap and place in the fridge a few hours before slicing

  9. Slice, serve and enjoy
