Gluten-Free Tropical Breakfast Loaf
Ingredients
Dry
- 1/2 Cup Coconut Flour
- 80g Vanilla Protein
- 1/3 Cup Granular Sweetener
- 2 tbsp Unicorn Superfoods Immunity Blend
- 1/2 tsp Baking Soda
- 2 tsp Baking Powder
Wet
- 1/2 Cup Egg Whites OR Alternative
- 200g Banana, Mashed
- 1/2 Cup Vanilla Yogurt
- 1 tsp Vanilla Extract
- 1/2 Cup Crushed Pineapple, drained of liquid
- 1 PASSIONFRUIT
Preparation
Preheat oven to 180°C
Line a loaf tin with baking paper
Combine all wet ingredients in one bowl
In a separate bowl, combine all dry ingredients then add to the wet ingredients
Mix well, pour into the loaf tin
Bake for 45-50 minutes until a toothpick comes out clean when tested
It will firm up while cooling
Once completely cooked, wrap in cling wrap and place in the fridge a few hours before slicing
Slice, serve and enjoy
