Chocolate Banana Bread with Banana Topping

Ingredients

  • 3 medium bananas, mashed
  • 1/2 cup maple syrup
  • 3 tbsp almond butter
  • 2 tbsp coconut oil
  • 1 tsp vanilla essence
  • 1 egg (can use flaxseed for vegan)
  • 1 cup oat flour
  • 1/2 cup spelt flour
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/3 cup chocolate chips
  • 1 extra banana for the topping

Preparation

  1. Preheat oven to 180 degrees Celsius. Line a 1lb loaf tin with baking paper or coconut oil.

  2. In a bowl combine flours, cocoa powder and baking powder.

  3. In another bowl mash ripe bananas and mix with the egg, almond butter, oil, maple syrup and vanilla, and mix until well combined.

  4. Then gently fold and mix dry ingredients including chocolate chunks into the banana mixture.

  5. Transfer the mixture to the prepared tin and cut the banana in half and place on top.

  6. Bake it in the oven for 50-55 mins or until knife comes out clean. ENJOY!
