Healthy Banana Bread with Walnuts and Spices

Ingredients

  • 2 large bananas (ripe, mashed)
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1 egg
  • 1 1/4 cup spelt flour
  • 1/4 cup plant milk (I used soy)
  • A generous handful of walnuts (crushed)

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a 1lb bread tin with baking paper or coconut oil.

  2. In a bowl, mix the egg, milk, mashed bananas, maple syrup and vanilla. Add the cinnamon, flour and baking powder until well combined. Stir in the walnuts.

  3. Pour the bread mix into the prepared tin and bake in the oven for 30-40 minutes until a knife comes out clean. Allow to cool and enjoy! It tastes even better with chocolate spread.
