Delicious Healthy Banana Bread

Ingredients

  • 60gr butter at room temperature
  • 70gr xylitol (similar to stevia but without bitter taste and specific for baking. I use the brand @goodgoodbrand). You can use brown sugar, approx 100gr
  • 2 bananas
  • 2 eggs
  • 60ml plant-based milk
  • 100gr gluten-free flour
  • 140gr buckwheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Walnuts optional/for decoration

Preparation

  1. Beat the butter + sugar/sweetener + eggs.

  2. Add the bananas and beat until there are no lumps.

  3. Add the flours, baking powder and salt. Keep beating.

  4. Transfer the mixture to a previously buttered loaf pan and bake for 45 minutes at 180C.

  5. Do not take them out of the oven as soon as the 45 minutes are up, it is better to turn off the oven and wait 5/7 minutes so that it does not sink.
