Delicious Gluten-Free Blueberry Muffins

Ingredients

  • 8 tablespoons room temperature butter
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups measure for measure gluten-free flour
  • 1/2 cup milk
  • 2 1/2 cups blueberries, fresh or frozen

Topping

  • 1/4 cup sugar

Preparation

  1. Preheat oven to 375°F.

  2. Line or spray 12 muffin tins.

  3. Beat the butter and sugar together.

  4. Add the eggs one at a time.

  5. Beat in the salt, baking powder, and vanilla.

  6. Add the flour alternating with the milk.

  7. Beat gently and scrape the sides and bowl.

  8. Mash 1/2 cup of blueberries and add them, then add the remaining blueberries and mix in gently.

  9. Pour the batter into the muffin tins and top with sugar.

  10. Bake for 30 minutes until golden on top.
