Fluffy Mini Blueberry Muffins
Ingredients
- 1/4 cup all purpose flour
- 1/4 cup coconut sugar
- 1/2 tsp. baking powder
- 1/4 cup mashed blueberries
- 1/4 cup nut or seed butter
- 2 eggs
Preparation
Preheat oven to 350F and spray or line a mini muffin tin.
Whisk together the eggs, nut butter, and blueberries, then stir in the dry ingredients.
Pour the batter into the muffin tin and bake for 10 minutes.
Notes
Can use a gluten-free baking flour substitute like 1:1 ratio.
Mashed blueberries can be prepared by warming frozen wild blueberries before mashing.
Top with a mixture of mashed blueberries and vanilla frosting after baking.
