Homemade Lemon Blueberry Pop-Tarts
Ingredients
- 1 1/2 cups all purpose flour
- 2 tbsp. coconut sugar
- 3 tbsp. cold butter
- 5 tbsp. cold water
Filling
- 1/4 cup mashed blueberries
- 3 tbsp. coconut sugar
- 1 tbsp. lemon juice
- all purpose flour (small amount to thicken)
Preparation
Preheat oven to 350F.
In a large bowl, whisk together the flour and sugar, then add in the butter and cold water with a fork. Use your hands towards the end; if the mix looks dry, add 1 teaspoon of extra water at a time.
Flatten the dough into a rectangle and cut into 12 slices.
In a small bowl, stir together the filling ingredients and place small amounts in the middle of 6 of the slices. You can adjust the measurements if you want more or less filling.
Place the other 6 slices on top of the fillings, press the edges together with a fork, and bake for 8-10 minutes. Top with frosting and mashed blueberries after baking.
Notes
Optionally use gluten-free baking flour and vegan butter for dietary preferences.
