Mini Blueberry Pop-Tarts with Fruit Filling

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup melted butter

Filling

  • 1/3 cup mashed blueberries
  • 1/4 cup coconut sugar

Topping

  • powdered sugar
  • blueberry juice
  • white chocolate

Preparation

  1. In a large bowl, combine the melted butter and flour.

  2. Roll the dough into a ball and place in the fridge for at least 10 minutes.

  3. Preheat oven to 350F and spray or line a baking sheet.

  4. Flatten the dough into a thin square and cut into 16 small squares.

  5. Place 8 squares onto the baking sheet, add 1/2 tsp. to 1 tsp. of the filling to the middle of each, and use a spatula to carefully place the remaining 8 squares on top.

  6. Press the edges together with a fork and bake for 10 minutes. Let cool before topping with a mixture of powdered sugar and blueberry juice, and add a white chocolate swirl.
