Mini Blueberry Pop-Tarts with Fruit Filling
Ingredients
- 1 cup all purpose flour
- 1/2 cup melted butter
Filling
- 1/3 cup mashed blueberries
- 1/4 cup coconut sugar
Topping
- powdered sugar
- blueberry juice
- white chocolate
Preparation
In a large bowl, combine the melted butter and flour.
Roll the dough into a ball and place in the fridge for at least 10 minutes.
Preheat oven to 350F and spray or line a baking sheet.
Flatten the dough into a thin square and cut into 16 small squares.
Place 8 squares onto the baking sheet, add 1/2 tsp. to 1 tsp. of the filling to the middle of each, and use a spatula to carefully place the remaining 8 squares on top.
Press the edges together with a fork and bake for 10 minutes. Let cool before topping with a mixture of powdered sugar and blueberry juice, and add a white chocolate swirl.
