Baked Doughnuts with Vanilla and Chocolate Chips

Ingredients

  • 4 tablespoons butter, room temperature
  • 1/4 cup oil (vegetable or coconut)
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla
  • 2 2/3 cups 1:1 gluten-free flour
  • 1 cup milk
  • 1/2 cup mini chocolate chips (optional)

Glaze

  • 1/2 cup semi-sweet or white chocolate
  • 2 tablespoons butter
  • 1 tablespoon plus 1 teaspoon light corn syrup or agave nectar
  • 1/4 teaspoon vanilla

Preparation

  1. Preheat the oven to 425 degrees Fahrenheit and grease the doughnut pan.

  2. Beat the butter, oil, and sugars until smooth.

  3. Add in the eggs.

  4. Stir in the baking powder, baking soda, nutmeg, salt, and vanilla.

  5. Stir in the flour and milk alternately.

  6. Mix in the chocolate chips if desired.

  7. Bake for 11 minutes.

  8. To make the glaze, melt the chocolate, butter, light corn syrup or agave nectar, and vanilla together.

  9. Mix the glaze and dip the doughnuts in it.

Notes

  1. The doughnuts are best eaten the day they are made.

  2. You can use regular flour instead of gluten-free flour.
