Easy Gluten Free Banana Loaf
Ingredients
- 85g marg/butter
- 75g sugar
- 3 medium eggs
- 3 very ripe bananas
- 250g gluten free flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 handful of choc chips (optional)
Preparation
Preheat the oven to Gas 4/180C. Grease a loaf tin (or use a silicone liner)
Cream butter and sugar. Then add the eggs and mix.
Mash the bananas and add to the mixture along with the vanilla.
Sift the flour and baking powder into the mix. Mix in adding the cinnamon too.
Pour into the loaf tin, sprinkle with chocolate chips and bake for 50 minutes (test with a skewer).
