Paleo Zucchini Banana Bread Bites
Ingredients
- 2 eggs
- 1/2 cup shredded zucchini
- 2 mashed bananas
- 1/4 cup unsweetened almond milk
- 1/4 cup coconut flour
- 1/2 tbsp cinnamon
- 2 tbsp almond butter
- 1/2 tsp baking powder
Preparation
Whisk 2 eggs in a bowl.
Pat dry the shredded zucchini before adding it.
Add the shredded zucchini, mashed bananas, unsweetened almond milk, coconut flour, cinnamon, almond butter, and baking powder to the bowl and mix well.
Line a mini cupcake pan with liners.
Pour the batter into the liners; this should make about 15 mini cupcakes.
Bake at 325°F for 20-22 minutes.
Optionally, top with cashew butter after baking.
