Homemade Banana Muffins with Cinnamon Pretzel Topping

Ingredients

Banana muffins

  • 1.5 cups almond flour
  • 1 tsp. baking powder
  • 1 tbsp. ceylon cinnamon
  • 1/3 cup coconut sugar
  • 2 eggs
  • 2 bananas (1 cup mashed)

Cinnamon pretzel streusel

  • 1/2 cup almond flour
  • 1/2 cup crushed fitjoy pretzels
  • 1 tbsp. cinnamon
  • 1/4 cup coconut sugar
  • 3 tbsp. almond milk

Preparation

Banana muffins

  1. Preheat oven to 350F and line a muffin tin.

  2. In a large bowl, whisk together the dry ingredients and in a small bowl, whisk together the wet ingredients.

  3. Pour the wet into the dry and stir until well combined.

  4. Fill the muffin cups about 1/2 way full, top with Cinnamon Pretzel Streusel, and bake for 25-30 minutes. Allow the muffins to cool for 5-10 minutes before enjoying!

Cinnamon pretzel streusel

  1. In a blender or food processor, blend fitjoy pretzels until you get a fine crumb (measure out the 1/2 cup after blended.)

  2. Whisk together the dry ingredients, then stir in the almond milk!
