Homemade Banana Muffins with Cinnamon Pretzel Topping
Ingredients
Banana muffins
- 1.5 cups almond flour
- 1 tsp. baking powder
- 1 tbsp. ceylon cinnamon
- 1/3 cup coconut sugar
- 2 eggs
- 2 bananas (1 cup mashed)
Cinnamon pretzel streusel
- 1/2 cup almond flour
- 1/2 cup crushed fitjoy pretzels
- 1 tbsp. cinnamon
- 1/4 cup coconut sugar
- 3 tbsp. almond milk
Preparation
Banana muffins
Preheat oven to 350F and line a muffin tin.
In a large bowl, whisk together the dry ingredients and in a small bowl, whisk together the wet ingredients.
Pour the wet into the dry and stir until well combined.
Fill the muffin cups about 1/2 way full, top with Cinnamon Pretzel Streusel, and bake for 25-30 minutes. Allow the muffins to cool for 5-10 minutes before enjoying!
Cinnamon pretzel streusel
In a blender or food processor, blend fitjoy pretzels until you get a fine crumb (measure out the 1/2 cup after blended.)
Whisk together the dry ingredients, then stir in the almond milk!
