Paleo Gluten-Free Cinnamon Sugar Donuts

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla
  • 1/2 tablespoon coconut sugar
  • 1 tablespoon nut butter
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Coating

  • Melted coconut oil
  • 2 tablespoons coconut sugar
  • 2 teaspoons cinnamon

Preparation

  1. Preheat oven to 350F.

  2. In a bowl, whisk 2 eggs.

  3. Add 1 cup almond flour, 2 tablespoons maple syrup, 1/2 teaspoon vanilla, 1/2 tablespoon coconut sugar, 1 tablespoon nut butter, 1 teaspoon cinnamon, and 1 teaspoon baking powder. Mix together.

  4. Grease a donut pan.

  5. Pour batter about 3/4 of the way into the donut molds.

  6. Bake for 14-15 minutes.

  7. Remove from oven and let cool for a few minutes.

  8. Pop the donuts out of the molds.

  9. Brush with melted coconut oil.

  10. Prepare a mixture of 2 tablespoons coconut sugar and 2 teaspoons cinnamon.

  11. Dip the donuts in the cinnamon-sugar mixture.

  12. Place in the fridge to harden or enjoy immediately.

Tips

  1. For a plant-based version, use a flax egg instead of eggs. The texture may be slightly off, but the flavor is still good.
