Paleo Gluten-Free Cinnamon Sugar Donuts
Ingredients
- 2 eggs
- 1 cup almond flour
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla
- 1/2 tablespoon coconut sugar
- 1 tablespoon nut butter
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
Coating
- Melted coconut oil
- 2 tablespoons coconut sugar
- 2 teaspoons cinnamon
Preparation
Preheat oven to 350F.
In a bowl, whisk 2 eggs.
Add 1 cup almond flour, 2 tablespoons maple syrup, 1/2 teaspoon vanilla, 1/2 tablespoon coconut sugar, 1 tablespoon nut butter, 1 teaspoon cinnamon, and 1 teaspoon baking powder. Mix together.
Grease a donut pan.
Pour batter about 3/4 of the way into the donut molds.
Bake for 14-15 minutes.
Remove from oven and let cool for a few minutes.
Pop the donuts out of the molds.
Brush with melted coconut oil.
Prepare a mixture of 2 tablespoons coconut sugar and 2 teaspoons cinnamon.
Dip the donuts in the cinnamon-sugar mixture.
Place in the fridge to harden or enjoy immediately.
Tips
For a plant-based version, use a flax egg instead of eggs. The texture may be slightly off, but the flavor is still good.
