Gluten-Free Cinnamon Roll Bread
Ingredients
Dry
- 1 3/4 cup GF flour with xanthan gum
- 6 tbsp cornstarch
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 3/4 cup sugar
Wet
- 6 tbsp unsalted butter at room temperature
- 1 cup buttermilk at room temperature
- 2 eggs beaten at room temperature
- 1 tsp vanilla
Cinnamon sugar mix
- 1/2 cup sugar
- 2 tbsp cinnamon
Glaze
- 1 cup confectioners sugar
- 1 tbsp milk (any kind)
Preparation
Mix dry and wet ingredients in separate bowls.
Make a well in the center of the dry ingredients and pour in the wet mixture, then mix together.
Place half of the batter in a loaf pan.
Sprinkle half of the cinnamon sugar mix in the center.
Pour the remaining batter on top.
Spread the remaining cinnamon sugar mix over the top.
Use a knife to swirl the batter in all directions to create an uneven texture.
Bake at 350 degrees Fahrenheit for 30 minutes.
Lower the temperature to 325 degrees Fahrenheit, rotate the pan, and bake for an additional 10-15 minutes.
Serve warm or store for later.
