Banana Hemp Chocolate Chunk Bread

Ingredients

  • 4 bananas, mashed
  • 1/2 cup melted vegan butter or coconut oil
  • 1 flax “egg” (1 tbsp ground flaxseed mixed with 3 tbsp water)
  • 1/2 cup coconut sugar
  • 1/3 cup granulated stevia or xylitol
  • 1/3 cup coconut milk
  • 2 cups oat flour
  • 1/2 cup all purpose flour
  • 1/2 cup hemp seeds
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1 1/2 cups vegan dark chocolate, chopped

Preparation

  1. Preheat oven to 175C/350F

  2. Mix together dry ingredients in a large bowl and set aside

  3. Mix together the wet ingredients until well combined and gently fold through the dry until just incorporated

  4. Transfer to a lined loaf tin and bake for 50-55 minutes until the top is golden and a toothpick comes out just clean

  5. Allow to cool slightly before slicing
