Vegan Chocolate Chip Cookie

Ingredients

  • * 112g Vegan Butter
  • * 200g Brown Sugar
  • * 1/4 cup Soy Milk (or any plant milk)
  • * 1 Tbsp. Vanilla Extract
  • * 250g (2cups) all purpose Flour
  • * 1 tsp. Baking Soda
  • * 1 tsp. Baking Powder
  • * 2 tsp. Cornstarch/Cornflour
  • * 1/2 tsp Salt
  • * 1 cup Vegan Chocolate Chips or Chocolate Chunks

Preparation

  1. Preheat the oven to 350°F (180°C)

  2. Cream the butter and sugar together with a hand mixer. Then add the soy milk and vanilla and mix in

  3. Add your flour, baking soda, baking powder, corn starch and salt to a mixing bowl and mix together

  4. Add the dry ingredients to the wet and mix until properly mixed into a thick cookie dough. Add the chocolate chips and gently mix egain

  5. Scoop out the cookie dough with a table spoon on a baking tray covered with parchment paper. Bake for 15min

  6. When they come out allow to cool and firm up before transferring to a wire cooling rack. Once properly cooled store in an airtight container
