Healthy Carrot-Orange Breakfast Cake with Peanut Butter

Ingredients

  • 100g apple sauce
  • 1 big grated carrot (~ 200g)
  • 1tsp apple cider vinegar
  • 200ml soy milk
  • 1 tsp vanilla extract
  • Flavedrops (or other sweetener)
  • 100g oat flour
  • 100g rice flour
  • 1 tbsp starch
  • 2 tsp baking powder
  • 1/2 tsp baking baking soda
  • 30g almond butter
  • 1 tsp cinnamon
  • 1-2 tsp orange peel
  • 1/2 tsp ginger powder
  • 1 pinch of salt
  • optional: 3-4 dates

Preparation

  1. Mix all ingredients to a creamy dough

  2. If you want cut a few dates and add them! If the dough is too sticky, add some more plant milk

  3. Prepare a baking form with baking paper or oil and bake the cake in the preheated oven for ~ 45-60min ( 180°C/350°F, upper-/lower heat)
