Healthy Blueberry Chocolate Chip Banana Bread
Ingredients
- 160g mashed banana (from 2-3 bananas)
- 1 teaspoon apple cider vinegar
- 200ml plant milk
- 20g almond or nut butter
- 1-2 teaspoons cinnamon
- 1 teaspoon ground flaxseed or chia seeds
- 200g flour (e.g., 100g quinoa, 60g chickpea, 40g buckwheat)
- 1.5 teaspoons baking powder
- 0.5 teaspoon baking soda
- 50g coconut blossom sugar (adjust for sweetness)
- pinch of salt
- handful of blueberries
Optional add-ins
- Flavedrops
- chocolate chips or chunks
Toppings
- 1 banana
- almond flakes
- cinnamon
Preparation
Mix all ingredients to form a dough.
Pour the dough into a box-shaped pan that has been oiled or lined with baking paper.
Decorate with a banana sliced in half, almond flakes, and a sprinkle of cinnamon.
Bake in a preheated oven at 180°C (365°F) for approximately 60 minutes using upper and lower heat.
Serve plain or with chocolate or nut cream.
