Oil-Free Vegan Carrot Coconut Cake
Ingredients
- 2 cups coconut flour
- 1 cup oats
- 2 tablespoons ground flaxseed
- 1 tablespoon baking soda
- 1 tablespoon apple cider vinegar
- 10 medjool dates or 2 bananas
- cinnamon
- vanilla
- 1/2 cup almond butter
- 1.5 cups unsweetened soy milk
- raisins
- 3 cups grated carrot
Frosting components
- silken tofu
- vanilla
- date sugar
Preparation
Blend the coconut flour, oats, ground flaxseed, baking soda, apple cider vinegar, medjool dates or bananas, cinnamon, vanilla, almond butter, and soy milk in a blender.
Add raisins and grated carrot to the blended mixture.
Pour the mixture into a baking pan and bake in the oven for approximately 40 minutes.
For the frosting, blend silken tofu with vanilla and date sugar.
