Easy Vegan Chocolate Cake

Ingredients

  • 1 cup whole meal spelt flour (or all purpose or gluten free blend)
  • 1 cup xylitol (or coconut sugar, sugar)
  • 2 tsp baking powder
  • 1/4 cup cacao powder
  • 1 cup soy milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Preparation

  1. Preheat oven to 180C/350F

  2. Mix milk and vinegar and allow to stand for a few mins while you gather the other ingredients

  3. Mix all ingredients in a bowl until just mixed

  4. Spoon into a greased or lined cake tin

  5. Bake for 30 mins or until a toothpick comes out clean

  6. Allow to cool

  7. Drizzle with your favourite icing. I melted some dark choc and cacao butter to make ‘mylk’ chocolate

  8. Top with berries to serve or your favourite vegan ice cream
