Easy Vegan Chocolate Cake
Ingredients
- 1 cup whole meal spelt flour (or all purpose or gluten free blend)
- 1 cup xylitol (or coconut sugar, sugar)
- 2 tsp baking powder
- 1/4 cup cacao powder
- 1 cup soy milk
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 1/8 tsp salt
Preparation
Preheat oven to 180C/350F
Mix milk and vinegar and allow to stand for a few mins while you gather the other ingredients
Mix all ingredients in a bowl until just mixed
Spoon into a greased or lined cake tin
Bake for 30 mins or until a toothpick comes out clean
Allow to cool
Drizzle with your favourite icing. I melted some dark choc and cacao butter to make ‘mylk’ chocolate
Top with berries to serve or your favourite vegan ice cream
