Easy Moist Chocolate Cake

Ingredients

  • 2 eggs
  • 1 +3/4 cups plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cup cacao powder @tropeaka
  • 1/2 tsp salt
  • 2 cups coconut sugar
  • 2 tsp vanilla extract
  • 1/2 cup vegetable oil
  • 1 cup almond milk (chocolate) @almondbreezeaus
  • 1 cup water

Optional additions

  • Coconut yoghurt
  • Berries

Preparation

  1. Pre-heat oven to 180 degrees.

  2. Spray with cooking spray and then flour 2 x 9 inch round cake pans. Line the bottoms with parchment paper cut to fit the pan.

  3. In a large mixing bowl, stir together flour, sugar, cacao powder, baking powder, baking soda, and salt until everything is blended.

  4. In another large mixing bowl, whisk together eggs, milk, oil, and vanilla. Then whisk in boiling water. Then add the wet ingredients to the dry ingredients and stir until combined.

  5. Pour batter into prepared pans and transfer to oven. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool cake for 15 minutes in the pans on a wire rack. Then loosen edges, turn cake onto rack and cool for at least another hour.

  6. Once cooled, layer with coconut yoghurt in the center or your own frosting. Add berries on top and serve.
