Gluten-Free Pear and Chocolate Loaf

Ingredients

  • 2/3 cups oat flour
  • 2/3 cups buckwheat flour
  • 2 1/2 tsp baking powder
  • 1/3 cup coconut sugar
  • 1/2 baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut yoghurt
  • 3 large eggs
  • 1/3 EV cup olive oil
  • 1 tsp vanilla extract
  • 1 1/2 cups pear puree
  • 1/2 cup dark chocolate chunks

Preparation

  1. Preheat the oven to 190C and grease and line a loaf pan with parchment paper

  2. In a large bowl, sift together the flour, baking powder, baking soda and salt

  3. Add the sugar and chocolate chunks whisk to combine

  4. In a medium bowl, whisk together the coconut yoghurt, eggs, oil, vanilla and pear puree

  5. Fold the wet ingredients into the dry ingredients until just combined

  6. Pour into the loaf pan and bake for 55 minutes and a skewer inserted comes out clean

  7. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely

Tips

  1. This loaf can be included in lunchboxes as a healthy homemade treat to provide hydration, good starch, protein, fruit, and veggies

  2. Vary lunchbox contents to avoid boredom and introduce new items gradually
