Vegan Chocolate Fudge Brownie
Ingredients
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 cup boiling water
- 1/2 cup unsweetened chocolate, finely chopped
- 3/4 cup cocoa powder
- 2 1/2 cups coconut sugar
- 1 tablespoon vanilla extract
Preparation
Preheat the oven to 175°c and adjust the oven rack to the lowest position
In a medium bowl, combine the flour, baking powder, and salt
In a large bowl, whisk together the boiling water, unsweetened chocolate and cocoa until well combined and the chocolate melts
Stir in the sugar, oil, and vanilla
Using a rubber spatula, stir the flour mixture into the chocolate mixture until combined
Scrape the batter into a prepared pan and smooth the top
Bake until the surface is crackly and a toothpick inserted halfway between the edges and center comes out with a few moist crumbs attached, 25mins to 30mins
Let the brownies cool in the pan on a wire rack for 2 hours
Cut into squares and serve
