Vegan Chocolate Fudge Brownie

Ingredients

  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup boiling water
  • 1/2 cup unsweetened chocolate, finely chopped
  • 3/4 cup cocoa powder
  • 2 1/2 cups coconut sugar
  • 1 tablespoon vanilla extract

Preparation

  1. Preheat the oven to 175°c and adjust the oven rack to the lowest position

  2. In a medium bowl, combine the flour, baking powder, and salt

  3. In a large bowl, whisk together the boiling water, unsweetened chocolate and cocoa until well combined and the chocolate melts

  4. Stir in the sugar, oil, and vanilla

  5. Using a rubber spatula, stir the flour mixture into the chocolate mixture until combined

  6. Scrape the batter into a prepared pan and smooth the top

  7. Bake until the surface is crackly and a toothpick inserted halfway between the edges and center comes out with a few moist crumbs attached, 25mins to 30mins

  8. Let the brownies cool in the pan on a wire rack for 2 hours

  9. Cut into squares and serve
