Vegan Chocolate Peanut Butter Swirl Cake

Ingredients

  • 1 cup oat flour (can be made by blending dry oats)
  • 1/2 cup all-purpose flour
  • 3 tablespoons unsweetened cocoa powder
  • 3 heaping tablespoons coconut sugar (can be replaced with regular sugar)
  • 1/3 cup plant-based milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil (can be replaced with 2 tablespoons yogurt or 1 tablespoon olive oil)
  • Pinch of salt (enhances flavors)
  • Optional: Dark chocolate pieces to add to the mixture
  • Peanut butter

Preparation

  1. Preheat oven to 180°C

  2. Blend all ingredients together using a blender or mini pimer until well combined

  3. Transfer the mixture to a small round greased baking dish or one lined with parchment paper

  4. Pour four parallel lines of peanut butter on top of the batter

  5. Using a toothpick or knife, drag in an S shape across the peanut butter lines to create swirls

  6. Bake in the preheated oven for 30 minutes
