Vegan Chocolate Peanut Butter Swirl Cake
Ingredients
- 1 cup oat flour (can be made by blending dry oats)
- 1/2 cup all-purpose flour
- 3 tablespoons unsweetened cocoa powder
- 3 heaping tablespoons coconut sugar (can be replaced with regular sugar)
- 1/3 cup plant-based milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil (can be replaced with 2 tablespoons yogurt or 1 tablespoon olive oil)
- Pinch of salt (enhances flavors)
- Optional: Dark chocolate pieces to add to the mixture
- Peanut butter
Preparation
Preheat oven to 180°C
Blend all ingredients together using a blender or mini pimer until well combined
Transfer the mixture to a small round greased baking dish or one lined with parchment paper
Pour four parallel lines of peanut butter on top of the batter
Using a toothpick or knife, drag in an S shape across the peanut butter lines to create swirls
Bake in the preheated oven for 30 minutes
