Vegan and Paleo Banana Bread No Sugar Added

Ingredients

  • 3 ripe bananas, mashed
  • 1 flax egg (1 Tbsp flax seed + 3 Tbsp water, soaked for couple min.)
  • 2 Tbsp coconut oil
  • 1/4 cup nut milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 Tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • Handful chopped walnuts (optional)
  • 1/4 cup vegan dark chocolate chips (optional)

Preparation

  1. Mix all the dry ingredients in a bowl. Set apart

  2. Mix all the other ingredients in a separate bowl. ?Combine the wet with the dry ingredients. ?Stir in walnuts and chocolate chips. ?Grease well a loaf pan with coconut oil and add the batter

  3. Bake for 30 - 33 minutes at 350F. Turn off the oven and let sit inside for extra 5-10 minutes. Take it out of the oven, and allow to cool down before cutting it
