Pink Pitaya Glazed Donuts
Ingredients
- 2 flax eggs (1 flax egg = 1 tbsp flax + 3 tbsp water) or 2 eggs
- 2 tbsp melted coconut oil
- 1/4 cup nut milk
- 1 tsp vanilla
- 1/4 tsp sea salt
- 1/4 cup coconut sugar
- 1 tsp lemon juice (or acv)
- 1 cup almond flour
- 1 tsp cinnamon
- 1 1/2 tsp baking powder
- 1/2 teaspoon baking soda
- 1/2 cup powdered monk fruit sugar (or regular powdered sugar if not paleo)
- 2-3 tbsp nut milk, as needed
- 2 tsps Unicorn Superfoods Pitaya powder
Preparation
Preheat oven to 350F and grease a mini donut pan
Combine the eggs, nut milk, lemon juice, coconut oil, coconut sugar, and vanilla in a large bowl, whisking until smooth. Then, stir in the dry ingredients
Divide the dough evenly amongst the donut pan, tapping the tray before inserting into the oven to ensure an even layer
Bake for 12-15 minutes, or until a toothpick inserted comes out clean. Remove from the oven and allow to cool
To assemble the glaze, mix the powdered sugar with 2 tbsp nut milk, to start. You want it to be a good glaze texture, not too thick, but not too runny. Add the pink pitaya powder and stir until completely smooth
Dip each donut into the glaze and set on a lined baking sheet until it hardens slightly (place them in the fridge). Enjoy
