Vegan Gluten-Free Tahini Chocolate Chip Cookies

Ingredients

  • 1/4 cup coconut oil
  • 1/3 cup tahini
  • 2/3 cup coconut sugar
  • 2 flax eggs (2 Tbsp flax seeds + 6 Tbsp water - soaked for 5 minutes)
  • 1/3 cup coconut flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 or 2/3 cup chopped dark chocolate
  • Flaky sea salt to sprinkle on top

Preparation

  1. Mix the oil, tahini, sugar, and the soaked flaxseed.

  2. Add the remaining ingredients.

  3. Bake for approximately 10 minutes at 350°F on a baking sheet with parchment paper.

  4. Let the cookies cool for a couple of minutes before removing them to a cooling rack to cool completely.
