Vegan Gluten-Free Homemade Oreos

Ingredients

Dough

  • 1 1/3 cup oat flour (blend your own oats)
  • 1/2 cup coconut flour (I used half plus nut pulp from a batch of my nut milk)
  • 1/3 cup raw cacao powder (or cocoa)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup coconut sugar
  • 1/4 cup molasses (or maple)
  • 1/4 cup nut milk
  • 1/2 cup coconut oil (melted)
  • 2 flax eggs (2 tbsp ground flaxseed + 6 Tbsp water, soaked for 5min)

Filling

  • 1/4 cup coconut butter
  • 1 scoop Vanilla Protein Shake (I use Organic & Vegan by @310nutrition )
  • 1 Tbsp or to taste of monk fruit sweetener or another of your choice
  • 4 Tbsp of warm water or as needed (or nut milk)

Preparation

  1. Prepare flax eggs by mixing 2 tbsp ground flaxseed with 6 tbsp water and let sit for 5 minutes

  2. Mix dry ingredients in a bowl.

  3. Mix wet ingredients in a different bowl.

  4. Mix the dry into the wet ingredients until you get a dough. Add more flour or cacao powder if needed or if it’s too dry, add a bit more milk.

  5. On a flat surface pour the dough in between a piece of parchment paper under the dough and on top. Then flatten with the help of a roller. Then cut some circles with a small jar or a special round cookie cutter.

  6. Bake at 350F for 12min.

  7. You should have 48 thin disc cookies.

  8. For the filling, simply mix all ingredients to make a paste. Adjust the liquid and coconut butter while you mix it.

  9. Then pour on top of one side of a cookie and then place a second cookie on top.

  10. Enjoy your Guilty-Free Oreos!
