Vegan Cookies Week

Ingredients

  • 1 cup gluten free flour;
  • 1/4 cup coconut flour;
  • 1/2 cup coconut oil
  • 1/4 cup coconut sugar (or monk fruit)

Preparation

  1. Mix coconut oil with sugar in a medium bowl. Stir in all remaining ingredients to form a dough

  2. Roll into balls, place on a cookie sheet, and bake 17 minutes

  3. Turn off the oven, open the oven door and let the cookies cool in there for 5 minutes

  4. Then take it out of the oven and let them cool for 5 minutes more to firm up
