Hemp Seed Cookies
Ingredients
- 1/3 cup coconut oil (solid and slightly softened)
- 1/3 cup nut butter
- 2/3 cup coconut sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- dash of cinnamon
- 1/3 cup coconut flour (add more if dough is too wet)
- 1 cup mini dark chocolate chips
- 1/4-1/3 cup hemp seeds
- 1/4 cup chia seeds
- flaky sea salt to sprinkle on top (optional)
Preparation
Preheat the oven to 350 degrees and line a cookie sheet with parchment paper
Beat together the coconut oil, nut butter, and coconut sugar until smooth
Add the flax eggs and vanilla, mix until smooth
Add the baking soda, salt, cinnamon, and coconut flour to the wet ingredients. Mix until incorporated, adding coconut flour little by little until a workable dough forms
Fold in chocolate chips, hemp seeds & chia seeds
Form dough into the shape of a cookie on the baking sheet (note these cookies won't spread)
Sprinkle with a bit of flaky sea salt if desired
Bake for 10 mins or until they turn golden brown around the edges and the center is slightly set
Let cool for about 7 mins on the cookie sheet and then move to a rack to cool completely. Try not to touch for 10 mins, they are delicate straight out of the oven
Best served chilled! They keep well in an airtight container in the fridge
