Zucchini Walnut Brownies
Ingredients
- 1 cup shredded zucchini (squeeze moisture out)
- 1 flax egg
- 1/2 cup tahini
- 1/4 cup maple syrup
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 cup cacao powder
- 2 tbs coconut flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp melted coconut oil
- 1/3 cup chocolate chips
- 1/2 cup chopped walnuts
Preparation
Preheat oven to 180°
Spray pan with non-stick cooking spray and line 8x8 pan with paper
In large bowl add shredded zucchini (squeezed of all excess moisture)
Next add flax egg, tahini, maple syrup, coconut sugar and vanilla, stir until smooth
Gently stir in cacao powder into batter until well incorporated
Next add coconut flour, baking soda, salt and coconut oil
Stir until well combined then fold in chocolate chips & walnuts
Pour into pan & bake for 35min or until toothpick inserted comes out with just a few crumbs attached (it should not be completely wet, but a little gooeyness is just fine ??)
Allow to cool completely
This step will be tough ? but it’s the best way to make sure the bars stay together perfectly since they will be moist!
If you'd like a chocolate drizzle:
Add 2 tbsp chocolate chips and 1/2 tsp coconut oil to a small bowl and microwave in 30 second increments, stirring inbetween until chocolate is melted
Drizzle over zucchini brownies
Sprinkle with a little fancy sea salt (trust me it's goooood)
Cut into squares ? enjoy!
