Fudgy Zucchini Walnut Brownies
Ingredients
- 1 cup shredded zucchini
- 1 flax egg
- 1/2 cup tahini
- 1/4 cup maple syrup
- 1/2 cup coconut sugar
- 1 tsp vanilla extract
- 1/2 cup cacao powder
- 2 TBS coconut flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 TBSP melted coconut oil
- 1/3 cup chocolate chips
- 1/2 cup chopped walnuts
Chocolate drizzle
- 2 TBSP chocolate chips
- 1/2 tsp coconut oil
Preparation
Preheat oven to 180°
Spray pan with non-stick cooking spray and line 8x8 pan with paper
In large bowl add shredded zucchini squeezed of all excess moisture
Next add flax egg, tahini, maple syrup, coconut sugar and vanilla, stir until smooth
Gently stir in cacao powder into batter until well incorporated
Next add coconut flour, baking soda, salt and coconut oil
Stir until well combined then fold in chocolate chips and walnuts
Pour into pan and bake for 35 minutes or until toothpick inserted comes out with just a few crumbs attached
Allow to cool completely
Chocolate drizzle
Add 2 TBSP chocolate chips and 1/2 tsp coconut oil to a small bowl and microwave in 30 second increments, stirring between until chocolate is melted
Drizzle over zucchini brownies
Sprinkle with a little fancy sea salt
Cut into squares and devour
