Easy Vegan Flourless Peppermint Brownies

Ingredients

  • 2 flax eggs (2 tbsp flax meal + 6 tbsp water, let sit for 10-15 min)
  • 1 cup tahini
  • 1/3 cup maple (see note below)
  • 2 tbsp coconut sugar
  • 1/3 cup pumpkin purée
  • 1/3 cup @yoursuperfoods chocolate lovers (or cacao powder)
  • 1-2 drops @frontiercoop peppermint
  • Dash of cinnamon
  • Pinch of baking soda
  • Handful of dark chocolate- I used @paschachocolate 100% cacao

Optional icing

  • 1 tbsp @artisanaorganics coconut butter
  • 1 tbsp maple syrup
  • 1 tbsp chocolate chips

Preparation

  1. Preheat oven to 350 degrees Fahrenheit

  2. Prepare flax eggs by mixing 2 tbsp flax meal with 6 tbsp water and let sit for 10-15 minutes

  3. Mix flax, pumpkin, tahini, and maple in a large bowl.

  4. Add cacao and stir well, until creamy.

  5. Add chocolate chips, peppermint, baking soda, cinnamon and stir.

  6. Pour into an oiled or parchment paper lined baking dish (8x8 or rectangle dish).

  7. Optional, sprinkle with sea salt.

  8. Bake at 350 for 28-30 minutes.

Icing

  1. Melt all together and spoon over cooled brownies
