Healthy Cinnamon Toast Crunch

Ingredients

  • 1 1/2 cup spelt flour
  • 3/4 cup coconut sugar
  • a pinch of salt
  • 2 Tbsp cinnamon
  • 1/2 cup coconut oil, melted
  • Flax egg (1 Tbsp Flax meal+3 Tbsp water)

Optional

  • 3 Tbsp plant milk (if too dry)

Preparation

  1. Prepare flax egg by mixing 1 Tbsp flax meal with 3 Tbsp water and let it sit for a few minutes to thicken

  2. In a bowl, mix together the spelt flour, coconut sugar, salt, and cinnamon

  3. Add the melted coconut oil and flax egg to the dry ingredients and stir to form a dough

  4. If the dough is too dry, incorporate up to 3 Tbsp of plant milk

  5. Shape the dough into small squares or cereal-like pieces

  6. Bake at 175°C or 350°F for 15-20 minutes.
