Healthy Cinnamon Toast Crunch
Ingredients
- 1 1/2 cup spelt flour
- 3/4 cup coconut sugar
- a pinch of salt
- 2 Tbsp cinnamon
- 1/2 cup coconut oil, melted
- Flax egg (1 Tbsp Flax meal+3 Tbsp water)
Optional
- 3 Tbsp plant milk (if too dry)
Preparation
Prepare flax egg by mixing 1 Tbsp flax meal with 3 Tbsp water and let it sit for a few minutes to thicken
In a bowl, mix together the spelt flour, coconut sugar, salt, and cinnamon
Add the melted coconut oil and flax egg to the dry ingredients and stir to form a dough
If the dough is too dry, incorporate up to 3 Tbsp of plant milk
Shape the dough into small squares or cereal-like pieces
Bake at 175°C or 350°F for 15-20 minutes.
